- 71% Pink Sea Salt: A little bit of salt brings out just the right amount of fruity, sweet notes in this house blend of cacao from the Dominican Republic and Bolivia. Since its release, this bar has remained a staff and customer favorite. We're proud to use salt from Salt of the Earth Co, who sources salt from the ancient salt mines of Salinas de Maras near Cusco, Peru, and contributes a portion of proceeds back to the surrounding community.
- 82% Bourbon Cask Aged: The first chocolate featuring cask aged cocoa beans. To make this bar, we crack Tanzanian cacao beans into cacao nibs, then age the nibs in empty Berkshire Mountain Distilling bourbon barrels for four weeks. During the aging process, the nibs soak up the essence of bourbon stored in the oak. After four weeks, the nibs are ground, mixed with a house blend of cane and maple sugar, and made into a deliciously deep dark chocolate with notes of caramel, vanilla, and oak.
- Rose Cardamom: Bar made by gently steaming Tanzanian cacao over rose petals and cardamom, conjuring a luscious and dreamy floral bar. Celestial, ambrosial, transcendental.
- 70% Turkish: Partnered with the amazing team at Washington based Olympia Coffee for this morning pick me up. This chocolate homage to Turkish coffee, a cup of joe with deep cultural heritage and an irresistible grit, blends earthy cacao from Tanzania with Olympia Coffee’s direct trade Morning Sun Colombian coffee.
